Introduction

Ingredients

    6 Boneless, Skinless Chicken Breasts
    2 tsp Pepper, black
    2 tbsp Extra Virgin Olive Oil
    1 medium (2-1/2" dia) Onions, thinly sliced
    1 can great value diced tomatoes, with juice
    1/2 cup Balsamic Vinegar
    1 tsp Basil
    1 tsp Oregano, ground
    1 tsp Rosemary, dried
    1/2 tsp Thyme, ground
    1 tsp Garlic powder
    1 cup sliced Mushrooms, fresh

Directions

Preheat oven to 375 degrees.
Spray large casserole dish with olive oil cooking spray.
Season both sides of each chicken breast with garlic powder and pepper. Lay in prepared casserole dish in a single layer.
In a large skillet heat olive oil over medium heat. Add onion slices, cook and stir until onion is browned about 3 to 4 minutes.
Spread the onion slices over the chicken. Top with sliced mushrooms.
In a separate medium sized bowl mix diced tomatoes, balsamic vinegar, mushrooms, basil, oregano, rosemary and thyme. Pour mixture evenly over chicken.
Bake uncovered in oven for about 35 minutes until chicken reads at least 165 degrees.

Serving Size: makes 6 servings, 1 chicken breast each
