Introduction

These easy sauteed vegetables are a great side dish for Mexican nights! These easy sauteed vegetables are a great side dish for Mexican nights!
Number of Servings: 2

Ingredients

    1 cup raw onion, sliced into quarters and separated
    1 cup green bell pepper strips
    1 cup zucchini, sliced into 1/4" thick circles then halved or quartered
    2 tsp taco seasoning
    2 tsp extra light or light olive oil

Directions

Heat oil in a 12" skillet, then add taco seasoning and veggies and stir fry until onions are translucent and peppers and zucchini are tender.

    Maybe the other Mexican items on my plate overpowered it. But, I could barely taste the seasoning at all. It definitely needs more than 2 tsp. to stand on it's own in a plate full of Mexican dishes. - 9/2/09
