Ingredients

    1 cup Whole Wheat Flour
    1/2 cup Flour, white
    1/2 cup Splenda Sugar Blend for Baking
    1 tsp Cinnamon, ground
    1/2 tsp Baking Powder
    1/2 tsp Baking Soda
    1/4 tsp Salt
    1 large Egg, fresh, whole, raw
    1 cup, mashed Banana, fresh
    1/2 cup Applesauce, unsweetened
    1 tsp Vanilla Extract
    1 cup, shredded Zucchini

Tips

If you do not like Splenda blend then use 1 cup of white sugar. They are not mini muffin size muffins.


Directions

Shred zucchini to measure 1 cup. Mash 2 very ripe bananas with a fork. Mix dry ingredients in a mixing bowl. Add egg, banana, applesauce and vanilla until just mixed but still lumpy stir in zucchini. Spoon evenly in to 12 large muffin cups. Bake at 350 for about 25 min or until tooth pick in center comes out clean
