Ingredients

    480 gram Ultra Grain Blend ( Costco All Purpose Flour)
    0.5 ounce Yeast, bakers
    2 tsp Kosher Salt
    18 oz Hot Water

Tips

Mix will be wet. This is a good thing. A crusty shell with airy soft inside. Do not kneed this dough.


Directions

Add weighted flour (480 grams is 4 cups)
Mixed with yeast ( 15 grams weighed)
Then mix salt (10 grams) to warm water ( 115 degrees F ) to dissolve. The water amount is 540 ml.
Mix salty water into flour/yeast a minimal amount.
Let rise 8 to 24 hours.
Punch down yeast and rise 30 minutes while preheating (greased Avacado oil works best) pan in 450 degrees F. oven
Bake 35 mintes covered than 10 to 15 minutes uncovered.
Cool prior to slicing.
