2 breast, bone and skin removed Chicken Breast (cooked), no skin, roasted
1 head, large (about 7" dia) Cabbage, fresh
1 cup green onions, top & bulb
0.50 cup Slice Almonds (includes nutrients)
4 serving Top Ramen Chicken flavored - Dry; Nutrients listed; 438g./serving
1 oz Sesame Seeds Roasted/Toasted; Nutrients listed; 1oz=28g
2 tbsp Sesame Oil; Nutrients listed
3 tbsp Olive Oil; Nutrients listed
10 tbsp Ken's Lite Asian with Ginger & Soy Salad Dressing; 2 tbsp = 30g
Tips
You can easily half this recipe, assembling the other half in a few days. I indicated with (**) next to the cooking/preparation steps where you might half the items. For instance, I usually make this for a potluck, saving half to make in a couple of days. I place half the unchopped cabbage, onions and chicken in containers in the refrigerator. I brown all the ramen, almonds,, sesame seeds in the oils and add the seasoning mixture. Then, I place half the mixture into a glass container, cool then cover tightly, leaving it on the counter (not in the fridge because it will loose it's crunchy texture). Then, I add half the chicken (shredded/chopped), to the pan and continue making the recipe. In a couple of days, all I have to do is chop the cabbage, onions and chicken and toss it with the already made ramen mixture and dressing. Fast & Easy!
Directions
• shred/chop chicken breasts, in separate bowl, set aside. **
• Remove seasoning packets from both packages Ramen noodles and set aside.
• Place Ramen noodles together in a ziplock bag and seal.
• Using a rolling pin whack the ramen into small pieces.
• In a large frying pan on med-high heat, add olive oil and LIGHTLY brown the Ramen.
• Lower heat to low, and add sliced almonds, stir, heat through.
• Add sesame seeds, stir.
• Add sesame seed oil, stir thoroughly.
• Add seasoning packets from Ramen, stir thoroughly.**
• Add shredded/chopped chicken, stir and heat through.
• Remove from heat.
• Add Ramen mixture to cabbage and onions, toss thoroughly.
• 15 minutes before serving toss in salad dressing.
