Ingredients

    3 whole Avocados
    1 bunch green onions white parts only trimmed and roughly chopped
    2 cup (8 fl oz) Chicken Broth (cooled)
    1 serving Lemon, fresh squeezed, juice of one whole lemon
    1.25 cup (8 fl oz) ice cold water
    2 clove Garlic
    1/4 t. cumin
    1/4 t. paprika
    roughly chopped fresh flat leaf parsley to garnish

Directions

Put the flesh of one avocado in a food processor or blender. Add roughly chopped spring onions, garlic and lemon juice and puree until smooth. Add the second avocado and puree. Then the third with the spices and seasoning. Puree until smooth. Gradually add the cooled chicken stock. Pour the soup into a metal bowl and chill. To serve, stir in the cold water, then season to taste with plenty of salt and black pepper. Garnish with chopped parsley and serve immediately
