Ingredients

    1 serving Half A Yellow Onion (by CARMELON)
    74 gram(s) bell pepper, red, sweet, raw
    2 cup Baby Spinach (raw)
    1 serving Great Value Frozen Hash Brown Patties, 1 patty
    0.5 cup, shredded Cheddar Cheese
    4 oz yogurt Greek Gods Poseidon Greek Yogurt nonfat plain
    1 serving El Pollo Loco, Spciy Chipotle

Tips

Can fold it over to make an "omelet", but not necessary.


Directions

Use canned chipotle in adobo sauce. Finely chop the chipotle to obtain 1 T and place in small bowl. Combine with yogurt. Add a pinch of salt and a splash of water. Stir well.

Slice the onion and pepper.

Spray an 8" nonstick pan with cooking spray and set over medium heat. Add onions and cook for 5 minutes or util softened. Add peppers and cook 5 minutes or until softened. Add spinach and allow it to wilt. Transfer this to a bowl.

Spray pan again and set back on medium heat. Add hash browns and season with salt and pepper to taste. Arrange the potatoes in a flat layer and sprinkle the cheese on top. Cook until bottom of hash browns are crisp and brown.

Transfer to plate and top with vegetables and chipotle mixture. Serve.
