Number of Servings: 4

Ingredients

    1 lb cubed pork tederloin
    2 tsp olive oil
    3/4 cup minced onion
    1 clove garlic, crushed
    1 tbsp plus 1 tsp of corn starch
    1 cup pineapple juice (reserved from can)
    4 tbsp tomato sauce
    2 tbsp vinegar
    1 tbsp soy sauce
    1 tsp brown sugar
    1/4 tsp curry powder
    3 strips lemon peel (optional)
    1 cup green pepper, cut into strips
    2 cups brown rice, prepared according to pkg

Directions

-Heat pan with olive oil and brown pork, onion and garlic together.
-Sprinkle meat and onion mixture with corn starch
-Mix together the pinapple juice, tomato sauce, vinegar, soy sauce, sugar, curry and lemon peel and add to meat mixture
-Bring to boil and remove from heat
-Transfer to oven safe dish (if necessary) and bake at 350 degrees for 1 hour
-Add green peppers and pineapple chunks during the last 5 minutes of cooking
-Serve over brown rice
