Introduction

Ingredients

    3 pepper, large (3-3/4" long, 3" Yellow Peppers)
    10 oz Beef, 90% Lean Ground Beef from Sirloin
    1 cup Spinach, cooked
    1 cup pieces Mushrooms, cooked
    1 tbsp Canola Oil
    1 cup Rao's homemade marinara sauce
    .33 cup Archer farms Asiago shredded cheese

Tips

Can use any meat you like - ground pork, ground turkey, etc.. Spicy sausage removed from it's casing works well. If you need more substance, add rice, orzo pasta, quinoa, etc..


Directions

Cut peppers in half. Brush with oil, sprinkle with salt and pepper. Roast in 350-400 degree oven until soft. In a pan, brown meat. Drain. Add sliced mushrooms to pan. Season with salt, pepper, garlic, oregano, basil. Add spinach to wilt. Season to taste. Remove from heat. Mix together meat, mushrooms, spinach, cheese and sauce. Stuff filling in peppers. Sprinkle top with cheese. Bake in over for 5-10 minutes.
