Ingredients

15 oz Isernio's Breakfast Chicken Sausage (by LIANHI_)
4 serving Bacon - Hormel Real Crumbled Bacon, 1tbsp
2 cup Spinach, fresh
1 cup, pieces or slices Mushrooms, fresh
.25 cup, crumbled Feta Cheese
.75 sweetpotato, 5" long Sweet potato
4 tsp Garlic
.5 tbsp Garlic powder
.5 tsp Salt
1 tbsp Pepper, black
4 tsp Bacon grease
7 large Egg, fresh, whole, raw
1 cup Egg whites, Naturegg Simply Egg Whites, 1/4 cup = 2 egg whites
2 oz Almond Breeze Almond Milk, Unsweetened Original, shelf stable
Directions
INSTRUCTIONS
1. Preheat oven to 400 degrees, grease 1 X 12 muffin pan or 2 X 6 muffin pans
2. Shred sweet potato & toss in fat & sprinkle w/ salt
3. Drop sweet potatoes in the bottom of each muffin cup (to form a crust) & bake for 20-25 minutes, until soft
4. While sweet potatoes cook, cook sausage in a medium skillet over med-hi heat. Cook until no pink remains in meat.
5. In a small skillet over med-hi heat cook bacon.
6. After sausage is done cooking, empty into a bowl & set aside.
7. After bacon is done cooking, place on folded paper towel to drain off some of the grease.
8. Drain sum of the bacon grease out of the small skillet into the medium skillet. Add garlic & spinach and saute'.
9. Layer sausage, mushrooms, sautéed spinach, bacon & feta cheese on top of sweet potatoes in the muffin cups.
10. Whisk together almond milk, eggs & egg whites. Pour evenly into 12 muffin cups.
11. Cook for 30 minutes.
