Introduction

Low carb chicken and veggies. Can be eaten alone or over rive or in tacos. Low carb chicken and veggies. Can be eaten alone or over rive or in tacos.

Ingredients

    1.0 tsp Cumin seed
    1.0 tsp Oregano, ground
    8.0 thigh, bone and skin removed Chicken Thigh
    4.0 clove Garlic
    1.0 cup, chopped Onions, raw
    2.0 cup, sliced Zucchini
    1.0 cup Tomatoes, red, ripe, canned, with green chilies
    1.0 tbsp chili powder
    8.0 tbsp Cilantro, raw

Directions

Add chopped onion to the bottom of the slow cooker followed by chicken and then zucchini. Top with spices and tomatoes and green chilies. You can add additional chopped hatch chilies, jalapenos or ground red chili powder for additional heat. Cook on low for 6 to 8 hours. Top with fresh chopped cilantro. Serve with pintos and/ or rice or corn tortillas. Serving Size: 1.5 cups
