Ingredients

Filling:
1/2 medium Onions, chopped
2 clove Garlic, minced
1 cup Sour Cream
1 can Sliced Black Olives
2 small cans Green Chili Peppers, chopped or minced
1 can Cream of Mushroom Soup
16 oz cooked shredded chicken
4 oz Mozzarella Cheese, part skim milk, shredded
16 flour Tortillas, 8 inch
Topping:
1 can Green Chili Enchilada Sauce - Mild
4 oz Mozzarella Cheese, part skim milk, shredded
Directions
In a mixing bowl, combine onion, olives, green chilis, sour cream, mushroom soup, chicken, and 4 oz. of shredded mozzarella.
Pour half of the can of green chili enchilada sauce into the bottom of a sprayed 9x13 pan.
Place a scoop of the filling mixture into a tortilla, roll, and place in pan, seam side down. Repeat until pan is full.
Pour remainder of enchilada sauce over the pan. Sprinkle remainder of mozzarella over pan.
Bake for 30-40 minutes at 350.
The filling mixture can also be used as a dip for parties or game day, or a small scoop placed on top of a single serving of tortilla chips for delightful nachos.
