Number of Servings: 4


    Zucchini, 2 cup, sliced (2 medium, sliced in half and quartered)
    Tomato Sauce, 15-ounce can
    Onions, 1 large, sliced
    Potatoes, 1.5 pounds (we like whole baby potatoes)
    Olive Oil, .25 cup
    Basil, 1 tbsp dried
    Bay Leaf - 3 leaves OR 1 tsp, crumbled
    Salt, 1 tsp
    Pepper, black, 1 tsp
    Garlic, 3 cloves chopped or 1.5 tsp powdered


Take zucchini and potatoes, coat in olive oil, salt, and pepper. Put in foil-lined pan or casserole dish.

Cut onion into thin slices over the top of the zucchini and potatoes.

Put bay, basil, and garlic over the other ingredients. Cover with tomato sauce.

Bake for 1 hour at 450 degrees.
