Ingredients
-
12 slices lower-sodium bacon, halved
1lb (16oz) Ground beef, lean
4 oz Cream Cheese
3/4 cup Colby and Monterey Jack Cheese, shredded
1/4 tsp Ground Turmeric
1/4 tsp Ground Coriander
1/4 tsp Paprika
1 tsp Onion powder
2 tsp Garlic powder
Salt, to taste*
Pepper, to taste*
(* nutritional info calculated with 1tsp each)
Directions
Preheat oven to 350 degrees F.
-Arrange bacon in a lightly greased jumbo muffin pan, with 3-4 pieces per cup. (An easy arrangement seems to be 2 pieces around the edge and 2 pieces making an X on the bottom. This forms a very sturdy 'basket')
-Put the bacon in the oven for approximately 10 minutes (until the edges are crisp)
-Combine the cream cheese and all spices in a bowl until smooth. Set to the side for now.
-Brown the ground beef in a medium saucepan. When it's nearly done, add the cream cheese mixture and simmer until the consistency is uniform throughout.
-Spoon half of the beef mixture into the bacon cups, pressing it firmly into the bottom so it holds nicely.
-Add half of the shredded cheese on top of the beef.
-Add the rest of the beef mixture, followed by the rest of the cheese.
-Bake for an additional 10 minutes or until cheese is golden.
-Let cool slightly before serving. Can hold well in the fridge for 3 days.
