Introduction

This is an easy to assemble and make veggie soup for those of us who have a hard time getting our five servings a day. NOTE: There is more potassium, magnesium, and E than nutrition info shows, but the labels didn't list them except on the tomatoes. Ingredients

    425 gram(s) Publix Gumbo Mix (1 15 oz bag frozen)
    425 gram(s) Publix Vegetable Soup Mix (1 15 oz bag frozen)
    411 gram(s) Margaret Holmes Tomatoes and Okra (1 14.5 oz can)
    794 gram(s) Hunt's Petite Diced Tomatoes (1 28 oz can)

Tips

I eat a fairly low sodium diet, so the seasonings in the bags and cans were enough for me. Some pepper or cumin would add a richer flavor.


Directions

Dump all of the ingredients in a 6 qt crockpot. Add water (I used the tomatoes and okra can as a measure and to get seasonings left in can). Cook on 300 degrees overnight. When you get up, your house will smell great, and you'll have plenty of soup for the entire week or more.
