Introduction

Ingredients

    1 batch Always-Fluffy Gnocchi, if frozen do not thaw
    3 tbsp olive oil
    3 large tomatoes, diced
    1 cup grape tomatoes, halved
    ¼ tsp sugar
    2 cloves minced garlic
    1 tbsp balsamic vinegar
    10 leaves basil, minced
    5 leaves lemon balm, minced
    1 sprig thyme, leaves stripped

Directions

Heat olive oil in a large pan over high heat.
Add the gnocchi in one layer and sauté about 5 minutes, stirring frequently, until warmed through, light brown and crispy.
Add the tomatoes, salt, pepper, sugar, garlic and vinegar.
Toss to heat the mixture through.
Remove from heat and stir in the herbs
Serve immediately.

Serving Size: Serves 10 as a starter, 6-8 as a main
