Introduction
My kids LOVE this.. I put it on pasta, use it as a dip and even put it on potatoes for a healthy potato salad. My hubby isn't big on basil so I don't use too much, you can add to taste. The baby spinach (don't use the grown up kind) give a real healthy punch that is where the super comes from. My kids LOVE this.. Ingredients

2 cups baby spinach (washed)
1/4 cup parmsean cheese (grate or shred yourself DO NOT use the powdered type)
1/4 pine nuts
2 tbsp Olive Oil
5 leaves fresh basil
1 tsp lemon juice
water added by tsp as needed
Directions
put all items in a food processor and blend until smooth. Add water if you need to loosen it up. The lemon juice is to help it stay bright green not for flavor so don't add more. You can also toast the pine nuts for added flavor.
