Ingredients

    2.0 cup, chopped Onions, raw
    1.0 serving 1 Med. Green Bell Pepper
    1.0 serving Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips
    74.0 gram(s) bell pepper, red, sweet, raw
    4.0 tsp Garlic
    2.0 eggplant, unpeeled (approx 1-1/4 lb) Eggplant, fresh
    3.5 cup Del Monte Diced Tomatoes, No Salt Added

Directions

Heat oil in a large nonstick saucepan over medium-high heat. Add onion and bell peppers; sauté for 3 minutes. Add garlic, and sauté for 1 minute. Add the eggplant, salt (optional), black pepper (optional), and tomatoes; stir to combine. Cover, reduce heat, and simmer 10 minutes.
