Introduction
This hummus has about 1/2 the carbs of chickpea hummus. This hummus has about 1/2 the carbs of chickpea hummus.Number of Servings: 8
Ingredients

220 g Zucchini (approx 1 cup chopped or 1/2 lb)
1 tbsp Olive Oil
1 clove Garlic, peeled
3 tbsp Lemon Juice
2 tbsp + 1 tsp Bell Plantation PB2
1/2 tsp ground Cumin
1 large Hard Boiled Egg
Tips
The mashing is not to make it easier to mix, but to remove excess water.
The egg is to thicken up the recipe to the right consistency w/o adding carbs.
To counter the eggy taste, add more lemon, garlic or pb2 according to your taste, but watch out, they are all a little carb heavy.
I normally make hummus with 2 tbsp lemon juice and 2 tbsp PB2, but added extra to bring back the hummus taste after adding the egg.
Directions
Thickly slice the zucchini and microwave for about 2 minutes to soften enough that you can mash it.
With a paper towel and something hard like the bottom of a measuring cup, mash the zucchini to remove excess water.
Combine all ingredients in food processor or blender and mix well.
