Ingredients

    11 cup Campbell's low sodium chicken broth
    2 medium (2-1/2" dia) Onions, raw
    8 clove Garlic
    3 stalk, large (11"-12" long) Celery, raw
    2 cup, pieces or slices Mushrooms, fresh
    1.5 cup Peas, frozen
    .5 cup Orzo Pasta
    6 ounces Chicken Breast (cooked), no skin, roasted
    1 tbsp Extra Virgin Olive Oil

Tips

I used chicken breasts from a grocery store rotisserie chicken.
Add more vegetables as you like, I just used what I had in my fridge.


Directions

Heat Olive Oil
Saute garlic and onions (2 minutes)
Add celery (2 minutes)
Add mushrooms, peas, chicken (3 minutes)
Add broth, bring to boil
Add orzo, bring to boil again
Simmer, covered, 1 hour

Serve with a pinch of grated cheese or parmesan

Serving Size: Makes 8 meal sized servings
