Introduction

Number of Servings: 6

Ingredients

    3 Leeks sliced- bulb and part of the green
    3 Medium Yellow Potatoes
    1 Carrot chopped or shredded
    1/2 C chopped Red Bell Pepper
    1 T Safflower Oil
    1 tsp Ground Cumin
    1 tsp Turmeric, ground
    1 tsp Ground Mustard
    3 Cloves Garlic minced
    2 C Vegetable Broth
    2 C Soymilk

Directions

Microwave potatoes for about 10 minutes. While potatoes are cooking, saute leek, red bell pepper and grated carrot in oil. Add garlic, then broth. Peel and mash potatoes. Add to pot. Add spices and simmer 15 to 20 minutes. Add milk , Enjoy!
For extra richness (and a few more calories) top with shredded cheese of choice.
