Ingredients

    2 ripe medium (7" to 7-7/8" long) bananas, mashed.
    1 cup milk, 1%
    2 egg whites
    2 tbsp vegetable oil
    1 tsp vanilla extract
    1 1/2 cups quick cooking oatmeal
    1/2 cup all-purpose flour
    1/2 cup whole wheat flour
    2 T granulated sugar
    1 T baking powder
    1/2 tsp salt

    SESAME CRUNCH TOPPING
    1/4 cup packed brown sugar
    20 grams walnuts
    2 T whole wheat flour
    1 tbsp sesame seeds
    1 tbsp butter
    1/4 tsp nutmeg, ground
    1/4 tsp cinnamon, ground

Tips

I blended my regular oatmeal slightly to substitute for the quick cooking oatmeal.


Directions

Prepare topping. Spray muffin cups with nonstick cooking spray or use paper liners. Preheat oven to 400 degrees. Combine moist ingredients in a large bowl. Set aside. Combine dry ingredients in a medium bowl. Stir into moist ingredients until just moistened (batter will be lumpy). Fill prepared muffin cups about 3/4 full. Sprinkle about 2 tsp. topping over each muffin. Bake about 20 minutes or until toothpick inserted in center comes out clean. Cool slightly in pan before transferring to wire rack. Serve warm. Make 14 muffins.

Serving Size: Makes 14 muffins...about 55 grams each.
