Ingredients

1 pound of medium sized cooked shrimp
1 Green Bell Pepper
1 Red Bell Pepper
1 Yellow Bell Pepper
10 oz of Fresh Crimini Mushrooms
2 Small Red Onions
3 Cloves of Garlic, crushed
1/2 cup of Extra Virgin Olive Oil
Salt
Black Pepper
Dried or fresh Basil
Directions
Cut all peppers into large pieces about one inch square. Clean mushrooms and leave whole. Chop onions into large chunks. Crush the Garlic. Put all in a large plastic zip bag or large sealed container. Add olive oil. Add garlic, salt, black pepper and basil. Seal bag or containter. Shake to coat all the veggies with oil and distribute garlic and spices. Let it set for about 5-10 minutes.
Place in a wire grilling basket. Allow excess olive oil to drip off of veggies before placing on the grill as it can flair up. (about 5 minutes or less)
Grill for 15-20 minutes to desired tenderness. Judge cooking time by the mushrooms, as they will cook faster, and peppers will still be slightly crunchy. Add shrimp in last 5-7 minutes. Stir / shake often.
Great over brown rice.
Can also be made without the shrimp.
