Introduction

Number of Servings: 12

Ingredients

    *2 large eggs.
    *1/3 cup brown sugar.
    *1 cup non-fat milk .
    *1 cup low-fat yoghurt.
    *2 whole orange (skins as well) pureed.
    *8 dates. (chopped)
    *3 cups wholemeal flour
    *1 tsp baking soda
    *2 tsp ground cinnamon
    *3 rounded tsp baking powder

    Topping: Cinnamon and brown sugar

    I also substitute the oranges for 1 can of unsweetened pineapple (drained) ans omit the cinnamon.

Directions

Pre heat oven to 200 o C.
Beat eggs and brown sugar together. Add milk yoghurt, orange puree and dates, then fold in dry ingredients.
Spoon into muffin tins , then sprinkle with topping. Bake at 200 o C. for 15-20-minutes

Makes 12 large or 24 small muffins
