    2 cups less 2 tablespoons whole wheat pastry flour
    2 tablespoons sugar
    1/2 teaspoons salt
    1 1/2 teaspoons baking powder


Two cups of this mix yields 12 pancakes.

Whisk the ingredients together. You can place the mix in an airtight container and it will last for up to three months in the pantry!

When you're ready to use, use 2 whole large eggs and 1-1 1/2 cups of milk to mix with the dry ingredients (all 2 cups of it). Feel free to add more milk if you think the batter looks too thick.

    I had a sweet craving and made 1/2 this recipe with whole wheat flour and threw in some blueberries. Awesome treat and not too shabby on calories either... thanks! - 1/6/10
