Introduction
I made a really quick and easy Asian slaw a few nights earlier and my husband suggested I make some more, but I didn't want fish sticks again with it. So, I used boneless skinless chicken breasts and Jasmine rice. Yummy! Ingredients
-
10.5 oz Dole Angel Hair Cole Slaw (3 oz. = about 1 1/2 cups) (by DLEEGUILL)
1 cup, chopped or diced Broccoli, fresh
117 grams Apples, fresh with skin
11.15 oz Boneless Skinless Chicken breast, Forester Farmer's Market, found at Sam's Club, 112g
6 serving RICE - Dynasty Jasmine Rice 1/2 cup cooked
1 serving Asian Crunchy Slaw-Salad Dressing (by BLMOFMI58)
10 grams Peanuts, dry-roasted
10 grams Cashew Nuts, dry roasted (salt added)
1 tbsp Extra Virgin Olive Oil
Tips
I used an Asian dressing from a previous Asian slaw bag, so I am not sure about the exact nutrition on it.
Directions
--I cooked the rice per instructions and grilled the chicken in the skillet. While the rice is cooking and after the chicken is resting, chop your broccoli, apples, and nuts.
--When the rice is done, stir in the olive oil and chopped up chicken. Set aside.
--Mix, slaw, broccoli, apples, nuts, and dressing. Mix well.
--You can mix it all together or keep the two mixes separate. We chose apart.
---*****This makes 4 HUGE servings, but I was trying to make it for my anorexic daughter and make the fat, protein and carb count higher. You can adjust your serving size down. *****---
