Introduction

This is the cornbread recipe found on the box of Quaker corn meal, but with a healthy twist. I use applesauce instead of oil and add 1/4 c. of wheat flour (removing 1/4 c. white flour). Ingredients

    1 c. White Flour
    1/4 c. Wheat Flour
    3/4 c. Corn Meal
    1/4 c. Sugar
    2 tsp. Baking Powder
    1/4 tsp. Salt
    1 c. Nonfat Milk
    1/4 c. Applesauce
    1 Egg

Directions

Mix dry ingredients in a bowl.
In another bowl, beat egg. Add remaining wet ingredients.
Add wet ingredients to dry ingredients.
Mix just until moistened
Bake 400 degrees for 20-25 mins.
Makes 16 2-inch squares.

    I love the substitution of applesauce for oil. I've done this with cakes, but never thought of it in cornbread. Great one! - 2/3/10

    After reading from some of the comments that this was dry, I added 1/3 c. applesauce instead of 1/4 c. It came out very moist, fluffy, and surprisingly sweet. I absolutely loved it! Thanks! - 11/16/11

    This was an awesome recipe. I made it last night with our chili and it was tender, sweet and yummy! Even our dog couldn't get enough! She sneaked almost half the pan before we could stop her! - 2/28/09
