Introduction

Zucchini and fresh green beans grilled with olive oil and mushrooms - delicious and nutritious without the added calories and fat of breading and deep frying. Number of Servings: 4

Ingredients

    2 cups sliced zucchini (I use 1 cup zucchini and 1 cup yellow squash)
    1 cup sliced fresh mushrooms
    1 tsp extra virgin olive oil
    1/2 tsp sea salt
    1/2 tsp paprika
    1/4 tsp black pepper
    Other spices to taste.

Directions

Mix spices (salt, paprika, pepper, and other spices you prefer) together.

Heat olive oil in saute pan over medium heat.

Add vegetables (zucchini, green beans, and mushrooms).

Add spices.

Toss vegetables and spices in the oil.

Cover and let saute for 5-10 minutes, stirring every minute or so.

Cook until vegetables are to your liking.

Serve and enjoy.
