Ingredients

    144 tsp Domino Light Brown Sugar
    1 cup Lard
    1 cup Butter, unsalted
    908 grams Raisins
    6 cup Flour - Gold medal all purpose flour
    454 grams Dates
    454 grams Black Walnuts
    2 tsp Baking Soda

Directions

Cream the brown sugar and butter/lard together. Add the eggs one-at-a-time and mix until each is incorporated. Mix the baking soda in
2/3 cup of the warm raisin juice. (Be careful. It’s gonna foam.) Add this to the mixture and blend completely. Add the flour in 3 installments and mix until blended. Fold in the raisins, dates and walnuts. Drop by spoonful onto greased cookie sheet. Bake at 425° for approximately 10 minutes.
