Ingredients

    8.0 tbsp Smucker's Sugar Free Apricot Preserves
    3.0 tbsp Kikkoman Less Sodium Soy Sauce
    2.0 tbsp Essential Everyday Pure Canola Oil
    1.5 lb Pork, fresh, loin, top loin (chops), boneless, separable lean and fat, raw
    4.0 clove Garlic
    4.0 cup, chopped Broccoli, fresh
    140.0 gram(s) bell pepper, red, sweet, raw
    4.0 oz Eat Smart Snow Peas

Directions

Whisk preserves and soy sauce together in a bowl until smooth. Thinly slice pork and pepper. Mince garlic. Heat 1 tablespoon of the oil in a large nonstick skillet over high heat. Add pork and cook, stirring frequently, until lightly browned and no longer pink, about 5 minutes. Transfer to a plate. Add remaining oil and garlic to the same skillet; cook over medium-high heat for 30 seconds. Add broccoli, pepper, and snow peas and cook until veggies are crisp-tender, about 3 minutes. Put the pork back in and stir in the preserves mixture; cook 1 minute more. Serve hot.
