These are some of the veggies I mix together when preparing scrambled eggs or an omelet. These can change up based on what you have on hand, but make sure they are fresh and crisp! Ingredients

    1 tbsp Peppers, sweet, red, fresh
    1 tbsp Celery, raw
    3 tbsp chopped Onions, raw
    .50 cup Spinach, fresh

Tips

This is a great way to get nearly a full serving of veggies in at breakfast! Add more or less according to your taste!


Directions

Blast saute pan with Pam or other spray oil and add chopped veggies. Saute to your taste ( I like mine crunchy.) Once veggies are to your liking, pour over egg mixture. From there, prepare your omelet or just scramble the veggies into your eggs. Salt and pepper to taste. This recipe doesn't include cheese, but feel free to add your favorite!

Serving Size: Helps make one veggie omelet or 1.5 scrambled eggs.
