This is a quick way to use up leftovers. You can substitute lots of veggies that are on hand, and add spices as you wish. Using leftover, previously cooked ingredients makes it a fast meal. Ingredients

    1/2 cup cooked broccoli (can be from frozen)
    1/4 cup, chopped tomatoes
    1 tbsp chopped onion
    1 dash pepper
    0.15 tsp salt
    2 tbsp chunky salsa
    1 medium baked potato, with skin, diced

Tips

Be sure to have your potato baked before starting this recipe, can bake day before & store in fridge until ready to use.


Directions

Place all ingredients in a non-stick skillet on medium-high heat and cook until heated through, stirring occasionally. No oil needed, but if food is sticking, add a little water to the mixture and stir more frequently.
