Ingredients

16 oz Tyson boneless, skinless chicken breast
1 large Onions, raw
2 serving 1 Med. Green Bell Pepper
1 serving Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips
74 gram(s) bell pepper, red, sweet, raw
3 tbsp Butter, unsalted
1 cup El Paso Red Enchilada Sauce (by DGOLDBERG77)
8 serving cheese, Kraft Italian 5 cheese blend (1 oz or 1/4 cup)
8 serving Green Onion (fresh-1 stalk)
Directions
Preheat oven to 350 degrees
Saute pepper and onions in some olive oil for 5-7 minutes. Season with salt and pepper.
Layer the bottom of caserole dish with shredded chicken.
Top with the peppers and onions.
Pour enchilada sauce over top.
Top with cheese and green onion.
Cover with foil and bake for 20 minutes.
Remove foil and cook for another 10 minutes until cheese is melted.
Serving Size: makes 8 pieces
