Ingredients

1 free-run chicken ( 700 - 900 gm), take off the skin and fat
900 gm winter melon, with skin and seeds (cut into cubes of 1.5" x 1.5"x 1.5")
2 dehydrated scallop
2500 cc water
1 tsp salt
Directions
1. Put water into a big pot and heat until boil.
2. Add chicken, dehydrated scallops and winter melon into the boiling water and heat until boil up again. Switch to low heat and boil for 20 minutes.
3. Take out the chicken and let the remaining ingredients to continue the boiling.
4. When the chicken is cool enough, take out the fresh by hand and form hand-tear chicken.
5. Put back the chicken bone into the soup and continue the boiling. The total time for the boiling should be around 2 hours.
6. When done, take off the grease on top and add salt for seasoning.
7. For the hand-tear chicken, add a little soya sauce, white pepper and sesame oil for seasoning. If you find it cool, microwave for 30 seconds.
8. Take out the winter melon and eat as vegetable.
9. Good for 4 servings.
