Introduction

Ingredients

    1 large onion, chopped
    1.5 cup Vegetable Broth
    6 cloves Garlic, chopped
    1 28-oz. can Crushed Tomatoes
    1 (6 oz) Tomato Paste
    1 tsp. dried oregano
    2 cup Spinach, fresh
    2 cups fresh Basil
    8 oz. fresh Mushrooms, sliced
    16 oz Whole Wheat Spaghetti

Tips

Make even easier by using 2 24-oz jars of favorite pasta sauce & add the spinach & mushrooms and 1/2 cup broth to mixture when adding the crushed tomatoes.


Directions

1. In a large dutch oven, cook onion in 1/3 cup of vegetable broth on medium- high heat, stirring frequently, until beginning to brown.
2. Add garlic & mushrooms and continue to cook for a few minutes until mushrooms soften.
3. Ad crushed tomatoes, tomato paste, the rest of the broth, oregano, basil, & pepper.
4. Simmer uncovered about 20 minutes, stirring often.
5. Cook pasta until cooked al dente, according to package directions.
6. Add spinach, stir, cook 10 more minutes.
7. Serve sauce over pasta.
