Ingredients
-
1 cup, chopped Onions, raw
454 gram(s) Chicken - Extra Lean Ground chicken
.25 pepper, large (3-3/4" long, 3" Yellow Peppers (bell peppers)
0.50 tsp Salt (Windsor Half Salt) (by BEAZER19)
1 tbsp Canola Oil
2 clove Garlic
1 cup, chopped Hard Boiled Egg
1 package (10 oz) Broccoli, frozen
3 cup Cauliflower, Frozen, Kroger
Tips
If you need some help, let me know! :D
Directions
chop onions, peppers and garlic, cook in a pot with the canola oil until onions are brownish, add the lean ground chicken and cook together. Add spices.
For the "mash" I steam the broccoli and the cauliflower for about 10 minutes or until soft. To make the mash smooth i normally use the hand blender, salt and pepper to taste.
Get a tray, about 8x8, and put a lawyer of the mash, all the cooked chicken plus the chopped boiled egg, and add another lawyer of mash on top. Because of the moisture of the broccoli / cauliflower combination, you want to put this in the oven for about 10 minutes. This makes a tasty lunch to go!
Serving Size: makes 4 portions, on a 8x8 cooking tray
Number of Servings: 4
