Ingredients

    * sole (baked), 4 serving
    * Bread crumbs, dry, grated, plain, 1 cup
    * Thyme, fresh, 2 tsp
    * Pepper, black, 2 dash
    * Egg, fresh, 1 large
    * French Fries (french fried potatoes), 50 strips
    * fiddleheads, 4 serving
    * Salt, 1 dash
    * *Balsamic Vinegar, 1 tbsp

Directions

Put potatoes, leave skin on, put in water and let soak.

Take bread crumbs, mix in the thyme and pepper.

Take fish (sole) and dip in egg. Then dip in bread and brown in a non-stick pan. Use a tbsp of oil if needed. Put fish in oven, bake.

Boil potatoes for a few minutes, then put in oven to bake. Sprinkle with salt if you desire, though herbs from the garden are a nice addition too.

Put a pot of water on with a dash of sea salt. When it is boiling, add fiddleheads. Drain when finished.

Add fiddleheads, chips, and fish onto plate. drizzle with balsamic vinegar to taste.
