Ingredients

    0.5 cup Trader Joe's Thai Green Curry Simmer Sauce (by SWIZZLEPOP13)
    1 cup Coconut Milk (Silk)
    .25 cup Coconut Oil
    2 cup, sliced Zucchini
    2 cup Snow Peas, fresh
    1 cup, chopped Onions, raw
    8 tbsp *Jif Extra Crunchy peanut butter
    .125 cup Corn Starch

Tips

You can serve this with noodles but we found it quite satisfying by itself.


Directions

Melt coconut oil and saute veggies until the onions start to turn clear. Add half a cup of Thai green curry simmer sauce, 1 cup unsweetened coconut milk, and peanut butter. To add a little more thickness to the sauce, mix cornstarch in .3 cup cold water until the consistency of skim milk and add to the sauce. Simmer until the veggies are desired consistency.
