Ingredients

    1 tsp Salt
    2 clove Garlic
    0.50 cup, chopped Onions, raw
    3 sprigs Parsley
    2 medium (2-1/4" to 3-1/4" dia.) Baked Potato, with skin
    0.25 cup great value soy milk regular cindy
    2 tbsp margarine, hard, blue bonnet
    2 tbsp cream, heavy whipping Great Value 1 Tbsp=1serving
    1 large (3" to 4-1/4" dia. Baked Potato, with skin

Tips

Can substitute 1 T soy milk for cream for a lighter dish


Directions

Clean potatoes and remove eyes. Keep skin on. Dice. Boil with chopped onion 20-30 min. till tender. Drain water. Add fresh garlic, minced, salt, margarine, and soy milk. Beat with beaters till thoroughly mashed. Enjoy!
