Ingredients

6 tbsp. cornstarch
5 tbsp. unsweetened cocoa powder
1/4 tsp. salt
20 packets Equal Sweetener
4 cups skim milk
1tsp. vanilla extract
Directions
Mix first 4 ingredients with a wire whisk in a medium glass bowl. Pour in about 1/4 cup of the 4 cups of milk to make a paste. Add more milk if necessary to coat all of the cocoa mix. This will break down the cocoa powder so that it becomes moistened and free of lumps. Add rest of milk and vanilla.
Cook pudding in microwave on high for 3 minutes intervals, Stirring pudding each time with a wire whisk. Keep doing this until pudding is thick and creamy. Remove from microwave and check to see if it is sweet enough for you, if not add a few more packets of Equal to make it as sweet as you like. Let cool. To keep skin from forming, take a piece of saran wrap and place over pudding. Make sure the wrap is touching the whole top surface of the pudding. Remove when pudding is cool. Scoop pudding into individual serving dishes and place in refrigerator to cool completely.
