Introduction
Quick breakfast for on the go! Quick breakfast for on the go!Number of Servings: 12
Ingredients
-
8.0 large Egg, fresh, whole, raw
3.0 tbsp chopped Onions, raw
1.0 cup Spinach, cooked
0.5 cup *Kraft Natural Cheese Fat Free Shredded Cheddar
3.0 serving Ham - Hillshire Farm Deli Select Ultra Thin Honey Ham (2 ounce serving)
0.5 serving 1 Med. Green Bell Pepper
Directions
Preheat oven to 350. Finely chop onions and peppers and heat on medium. Shred ham and add to peppers and onions. Cook on medium until onions are clear and ham has slightly browned. You can also use any seasonings if you wish like salt and pepper (I use garlic powder and Mrs. Dash extra spicy). In a separate pan, wilt spinach on low-medium. In a bowl, whisk the eggs and add cheese and milk. When your ham and veggies have cooled, fold into egg mixture. Grease a muffin pan and spoon mixture into the pan. Bake at 350 for 15 minutes. When finished, set aside to cool. Eggs will be slightly runny, but will finish cooking as the pan cools.
