Introduction
I just tried this recipe for the first time and it is AWESOME!!!! My whole family LOVED it. Even my little girl who is incredibly picky, ate a whole enchilada!!! Ingredients

Light Mayonnaise
Honey
flour
milk
fat free shredded cheese, divided
chopped onion
minced garlic
diced, cooked chicken or turkey
salsa
chopped or dried parsley
Fat free flour tortillas
Directions
In medium sauce pan blend light Mayo w/ scant tablespoon of honey and flour. Whisk in milk. Cook and stir over medium heat until sauce comes to a boil and thickens. Stir in 1 1/2 c. cheese. Reserve 1 cup sauce.
Spray non-stick pan w/ olive oil and fry onion, minced garlic and chicken until chicken is cooked.
Add remaining sauce (minus the 1c.) to chicken, onion and garlic (after cooked thorough). Stir in salsa, and parsley.
Prepare 13X9" baking dish by spraying w/ non-stick spray.
Spoon 1/3 c. of this mixture onto each tortilla. Wrap tortilla around filling. PLace filled tortillas seam side up in baking dish. Spoon reserved sauce over enchiladas. Top w/ remaining cheese. Bake @ 375 for 25 min.
