Ingredients

.5 cup, chopped Onions, raw
1 cup, pieces or slices Mushrooms, fresh
2 cup Spinach, fresh
2 cup Egg substitute, liquid (Egg Beaters)
7.5 tsp Old El Paso Taco Seasoning Mix (40% Less Sodium)
1 cup, chopped or sliced Red Ripe Tomatoes
16 oz Turkey Sausage 93% lean cooked (from ground turkey) (by VINCE001)
12 serving Whole Wheat Tortilla, medium (45g)
Directions
Saut้ onions in a little cooking spray until translucent and tender, just a few minutes. Add mushrooms
and spinach. Allow spinach to wilt.
Whisk eggs and egg whites together. Pour into heated skillet and scramble eggs until cooked.
Add meat, taco seasoning, and tomatoes, stirring well to combine and coat.
Fill tortillas with mixture and top with a pinch of low-fat cheese if desired.
Fold tortillas into burritos, tucking in the sides so the filling is fully enclosed, and wrap in plastic wrap
to maintain form.
Freeze!
When youre ready to enjoy, reheat in microwave for about 12 minutes, turning halfway.
