Ingredients

    4 oz Neufchatel cheese
    1/2 cup Feta Cheese Crumbles
    24 oz Pink Salmon (4 fillets)
    2 large Scallions, raw
    1/2 cup Spinach, fresh
    1 tbsp Extra Virgin Olive Oil

Directions

Mix cheeses, spinach and scallion well. Split salmon fillets brush both sides with olive oil and spoon in mixture. Bake at 350 for 20 minutes Serving Size: 4
