Ingredients

2 medium Zucchini - grated
1 medium Carrots, grated
1 medium brown onion, diced
6 eggs
1 cup Flour, white
1.5 tsp Baking Powder
0.5 tsp Salt
1 cup, shredded Cheddar Cheese
0.25 cup Canola Oil
Black pepper, to taste6 large Egg, fresh, whole, raw
Tips
Use a food processor. I do not drain or squeeze the zucchini, as I prefer mine quite moist. Don't use olive oil, as taste can be strong.
Directions
Preheat oven to 350F.
Mix flour, baking powder, and salt in small bowl.
Beat six eggs in large bowl.
Add flour mixture and beat until smooth.
Add grated zucchini, carrot, onion, cheese, and black pepper.
Mix thoroughly and add to 8" x 10" baking pan for six thick servings, or. 9x13" pan for thinner slices.
Back 30 minutes, or until done. Should be moist from zucchini.
