Ingredients

    16.0 oz Pork Tenderloin
    4.0 serving Pacific Natural Foods Organic Free Range Chicken Broth, 1 cup
    36.0 tbsp Peanut powder - Jif
    0.5 cup, chopped Onions, raw
    1.0 tbsp Extra Light Olive Oil
    1.0 oz Virginia Peanuts
    8.0 tbsp Thai green curry paste

Directions

Chop peanuts and toast in olive oil, remove and set aside, leaving oil in the pan. Cut the tenderloin into bite sized chunks, brown in pan, add a couple of spoons of the peanut powder, the curry paste and onions, stir and coat the meat. Add the carton of broth, bring to a boil, simmer for another 20 min. Slowly add the rest of the peanut powder, stirring well after each addition to combine. Serve over rice.
