Ingredients

500 gram(s) All-Purpose Flour, unbleached (by TRICOTINE)
2.5 grams Granulated Sugar
5 grams Butter, unsalted
.834 ounce Yeast, bakers
7 grams Salt
260 grams Water, tap
Directions
Sift the flour and set it aside.
Combine the yeast and water and mix well.
Add the flour, butter, sugar and salt.
Kneed into a dough, ( I cheat and use a Kitchen Aid mixer with a dough hook.) and let rise until doubled. Kneed again and let rise until doubled. (The kneeding wil be about 2x20 minutes.)
Form the Brötchen, *(rolls), and allow to rise.
Take a sharp knife and spit open the top.
Bake at 240Cel/450Fer. for 18-20 minutes. Remember to place an oven safe dish with water in it inside the oven while baking the Brötchen, *(rolls).
Serving Size: Makes 12 rolls, (15 if you like)
