Introduction

Ingredients

    1 1/4cups oat bran
    1 cup whole wheat flour
    2 teaspoons baking powder
    1/4 teaspoon baking soda
    4 Tablespoons Stevia Extract (powdered)
    3/4 cup unsweetened applesauce
    1/2 cup unsweetened Almond Milk
    1 large egg
    1 tablespoon canola oi
    1/2 cup dried cranberries
    cinnamon, for sprinkling

Directions

Preheat oven to 400 degrees. Makes 12 muffins.
Spray bottom of 2 1/2 inch muffin cups with nonstick spray, set aside (or use paper liner cups).
In mixing bowl combine all dry ingredients, oat bran through Stevia. Make a well in the center of the dry mixture and set aside.
In another bowl combine the wet ingredients, applesauce through canola oil. Add applesauce mixture all at once to dry mixture, stirring until just moistened (batter will be lumpy). Gently fold in cranberires.
Spoon into prepared muffing cups, filling 2/3 full. Lightly sprinkle tops with cinnamon. Bake at 400 degrees for 18 minutes or until a toothpick comes out clean. Remove from cups and cool on a wire rack. Serve warm.
