Introduction

Single serving size, quick and easy when you "need" a muffin or bread. Single serving size, quick and easy when you "need" a muffin or bread.

Ingredients

    1 tbsp Butter, unsalted
    1 large Egg, fresh, whole, raw
    1 tbsp Coconut flour
    1/4 tsp Baking Powder

Tips

This is much milder tasting than the almond breads, which I also like. I would like to try this recipe in a wider container than a custard shape, to get a larger slice for "sandwiches". This also has more of a bread texture than cloud bread or almond breads.


Directions

In medium bowl, mix the ingredients well, until very smooth.
Use spatula to transfer to small pyrex bowl (like a custard dish).
Microwave on high for 90 seconds.
If it appears to not be "set", microwave 10-20 seconds longer max.
Loosen with small knife and remove from bowl to plate.
(Mine seldom needs the knife, it loosens nicely).
Cut in half (or thirds) and top with your favorite topping.


Serving Size: Makes one serving (can cut into two "slices")
