Introduction

This is a recipe I got from a TV show years ago. Called dinner and a movie. They are very good. I can't find the recipe on line anymore. So I thought I'd share. Number of Servings: 7

Ingredients

    Obi Wan Cannelloni's
    14 manicotti pasta shells
    2 oz Prosciutto or Pancetta
    10 cup Spinach, fresh
    4 serving Pork: Bacon, pan fried (1 slice)
    2 oz. Olive Oil
    1 cup, chopped Onions, raw
    2 cloves Garlic minced
    8 oz. Ricotta Cheese
    2 oz Mozzarella Cheese, whole milk
    5 oz Parmesan Cheese, grated
    2 large Egg, fresh, whole, raw
    1 cup Breadcrumbs
    1/4 cup Parsley
    1 cup Chicken stock

    Darth (To)mater sauce
    1 1/2 cups Red Ripe Tomatoes
    3/4 cup Olive Oil
    6 cloves Garlic sliced
    1/4 cup chopped Basil
    2 Tablespoons chopped parsley
    6 Basil sprigs

Tips

I use more tomato's than it calls for. In the sauce.


Directions

Obi Wan Cannelloni Instructions
1. Cook the pasta. Drain and shock in cold water.
2. Arrange side by side on a tray lined with moist towels and cover with plastic wrap.
3. Cook the bacon, prosciutto or pancetta in 1 Tbs. of olive oil. Add the onions and garlic. 5 minutes over Medium heat.
4. Add spinach and cook till liquid is gone. Let cool and chop
5. Add the 4 cheeses, eggs, breadcrumbs, and parsley.
6. Fill each Shell and place in a greased baking dish. Add the broth and the rest of the oil.
7. Cover baking dish with plastic wrap then cover it with foil. Bake at 400f oven. For 15 to 20 minutes.

Then make the Darth (To)mater sauce
1. Core and score the tomatoes. Drop the tomatoes in boiling water. Leave till skin starts to peel. Shock in cold water. Remove peel and halve. Squeeze out the seeds into a sieve, but save all the juice. Strain the juice. Dice the tomatoes and add to the juice. I actually use more tomatoes then it calls for.
9. Heat the olive oil and add the garlic. Cook over moderate heat 3 minutes or until sauce thickens. Add basil and parsley.

To Serve: Place 2 on a plate and cover with sauce and munch.
